With the real mIRC program you can be on many channels at the same time, and with a click on the nicknames you can speak private with them, you can altso to lots of other stuff like sending pictures, register youre nick, register a own channel, kick out people from youre channel and so on.
mIRC has tousands of channels from all around the world.
The servers I use all end with DALnet which I think is the server that gives the most freedoom and has the most people.
